- 12 Tbsp. unsalted butter (room temperature)
- 2 Tbsp. finely chopped fresh dill
- 1 1/2 Tbsp. fresh lemon juice
- freshly ground white pepper to taste
- 6 whole skinless, boneless chicken breasts, halved
- salt to taste
- all-purpose flour for rolling the chicken
- 2 large eggs, beaten for dipping the chicken
- homemade fine, dry bread crumbs for breading the chicken (about 2 c.)
- vegetable oil for deep frying
Directions

1Blend the butter with the dill, lemon juice and a healthy amount of white pepper.

2On a plate, shape the butter into 12 (1-inch) fingers.

3Cover the plate with plastic wrap and refrigerate until completely firm, at least 2 hours.
