  • 12 Tbsp. unsalted butter (room temperature)
  • 2 Tbsp. finely chopped fresh dill
  • 1 1/2 Tbsp. fresh lemon juice
  • freshly ground white pepper to taste
  • 6 whole skinless, boneless chicken breasts, halved
  • salt to taste
  • all-purpose flour for rolling the chicken
  • 2 large eggs, beaten for dipping the chicken
  • homemade fine, dry bread crumbs for breading the chicken (about 2 c.)
  • vegetable oil for deep frying

    Blend the butter with the dill, lemon juice and a healthy amount of white pepper.

    On a plate, shape the butter into 12 (1-inch) fingers.

    Cover the plate with plastic wrap and refrigerate until completely firm, at least 2 hours.
