  • 1 1/2 lb. cooked chicken (may substitute canned chunk chicken if in a hurry)
  • 1 1/2 tsp. salt
  • 1/2 tsp. pepper
  • 1 diced onion
  • 3 cloves fresh garlic
  • 1 (32 oz.) jar garden-style spaghetti sauce
  • 1 (15 oz.) tomato sauce
  • 1 (6 oz.) tomato paste
  • lasagna noodles
  • 1 lb. sliced fresh mushrooms
  • fresh lemon juice
  • butter
  • garlic
  • 1 lb. small curd cottage cheese
  • 2 large eggs
  • 3/4 c. Parmesan cheese
  • 1 pkg. Mozzarella cheese, grated or sliced

Directions

    Simmer salt, pepper, onion, garlic cloves, spaghetti sauce, tomato sauce and tomato paste for 1 hour, stirring occasionally. While sauce is simmering, boil lasagna noodles, drain and rinse with cold water.

    Saute 1 pound of sliced fresh mushrooms in butter and garlic and squeeze with fresh lemon juice.

    Mix cottage cheese, eggs and Parmesan cheese.
