Lemon Chicken

  • 6 chicken breasts, skinned
  • 1/4 c. flour
  • 1 tsp. salt
  • 1 Tbsp. oil
  • 3 Tbsp. margarine
  • 1 chicken bouillon cube, dissolved in 1 c. water
  • 2 lemons

Directions

    Put oil and margarine in heavy pot (or Dutch oven).

    Heat.

    Put flour and salt in bag and shake; add chicken breasts, shaking to cover.

    Brown chicken breasts in oil and margarine at medium heat for about 5 minutes on each side.

    Cook three at one time.

    When all are browned, remove from pot.

    Remove pot from heat.

    Add bouillon and stir to remove browned bits from bottom of pan. Squeeze in juice of 2 lemons.

    Return chicken breasts to pan; cover and return to heat.

    Simmer for 20 minutes until tender.
