Ingredients

  • 2 lb. chicken cutlets, cut into thin slices
  • 1/2 lb. flour
  • 2 eggs, beaten
  • 3 Tbsp. peanut oil
  • salt and pepper to taste
  • 1/2 can clear chicken broth
  • 1/2 lb. butter
  • 1/2 glass lemon juice

Directions

    Dip each slice of chicken into flour, then egg.

    Fry in hot peanut oil; brown on both sides.

    Remove from pan and put on paper to drain.
