Chicken Lime Soup

  • 1 (14 1/2 ounce) can diced tomatoes, undrained
  • 1 cup chopped onion
  • 3 garlic cloves, minced
  • 2 teaspoons dried oregano leaves
  • 1 bay leaf
  • 1 12 cups shredded cooked chicken
  • 1 12 quarts chicken broth
  • 12 cup fresh lime juice
  • salt and black pepper
  • 1 cup shredded monterey jack and cheddar cheese blend
  • 12 cup chopped cilantro

Directions

    Mix tomatoes, onion, chili peppers, garlic, oregano and bay leaf in 4-quart saucepot.

    Cook on medium-high heat 10 minutes, stirring occasionally.

    Add chicken, chicken broth and lime juice.

    Bring to boil.

    Reduce heat to medium-low; simmer 30 minutes.

    Remove and discard bay leaf.

    Season soup with salt and black pepper to taste.

    Serve in soup bowls topped with cheese and cilantro.
