- 1 1/4 c. sugar
- 2 Tbsp. flour
- 1/8 tsp. salt
- 1/4 c. butter
- 3 eggs
- 1 tsp. lemon rind (optional)
- 1 medium lemon, peeled
- 1/2 c. water
Directions

1Combine sugar, flour and salt.

2Blend in butter, add beaten eggs, water, rind and lemon (cut into slices) to sugar mixture. Put in unbaked pie shell.

3Top with crust and pick with fork.

4No slits in top.

5Filling will be real sugary.

6Bake at 400° for 30 to 35 minutes.
