  • 1/2 c. butter
  • 1 onion, minced
  • 1/2 lb. mushrooms, sliced
  • 1 c. medium pearl barley
  • 2 c. chicken bouillon
  • 1 lb. chicken livers
  • salt and pepper to taste

Directions

    Heat 1/4 cup butter in saucepan.

    Add onion and cook for 2 to 3 minutes.

    Add mushrooms and cook for 5 minutes.

    Add barley and brown lightly.

    Stir in bouillon.

    Cover and simmer for 25 minutes or until barley is tender and liquid is absorbed.

    Saute chicken livers in the remaining butter.

    Season to taste, then stir into barley.

    Makes 4 to 6 servings.
