- 1/2 c. butter
- 1 onion, minced
- 1/2 lb. mushrooms, sliced
- 1 c. medium pearl barley
- 2 c. chicken bouillon
- 1 lb. chicken livers
- salt and pepper to taste
Directions

1Heat 1/4 cup butter in saucepan.

2Add onion and cook for 2 to 3 minutes.

3Add mushrooms and cook for 5 minutes.

4Add barley and brown lightly.

5Stir in bouillon.

6Cover and simmer for 25 minutes or until barley is tender and liquid is absorbed.

7Saute chicken livers in the remaining butter.

8Season to taste, then stir into barley.

9Makes 4 to 6 servings.
