Chicken Livers Madeira

- 2 Tbsp. butter or margarine
- 1/2 c. Madeira wine
- 1 c. chicken broth
- 1 lb. chicken livers, cut into quarters
- 1 Tbsp. cornstarch
- 1/8 tsp. black pepper
- pinch of salt (optional)
- pinch of cayenne pepper
Directions

1In a large skillet, heat butter, then saute livers until lightly browned.

2Stir in wine.

3In small bowl, stir broth into cornstarch; stir mixture into skillet.

4Cook, stirring, until sauce is thick and smooth.

5Add salt and peppers.

6Serve over rice, noodles or toast.
