  • 1 chicken (4 to 5 lb.)
  • 2 c. bread crumbs
  • 1 c. cooked rice
  • 5 eggs, well beaten
  • 4 green onions, chopped
  • 1/2 tsp. salt
  • 3 c. chicken broth
  • 2 Tbsp. chopped pimentos

Directions

    Boil chicken in seasoned water until tender.

    Let cool in broth. Skin and cut in 1-inch cubes.

    Mix everything together. Bake in greased 3-quart casserole for 1 hour at 350°.

    Serve with following Mushroom Sauce.
