- 8 boneless chicken breasts, halved
- flour seasoned with salt and pepper
- oil
- 1 c. onion, finely chopped
- 2 c. chicken bouillon
- 1/2 tsp. curry (optional)
- 1 jar junior-size apricot baby food
- fresh parsley, chopped
- 1/2 c. slivered almonds
Directions

1Coat chicken with flour, fry on both sides until brown. Transfer to 9 x 13-inch shallow casserole.

2Add chopped onion.

3Mix chicken bouillon with apricot; pour over chicken.

4Sprinkle with parsley and almonds.

5Cook, covered, at 350° for 45 minutes, uncover and cook 20 minutes more.

6Serve over rice.
