  • 2 to 3 chicken breasts, skinned and deboned
  • 1/2 tsp. salt
  • 1/3 c. dry Marsala wine
  • 1 medium sweet red pepper
  • 2/3 c. chicken broth, chilled and defatted
  • juice of 1/2 small lemon
  • 1/4 tsp. pepper
  • 2 tsp. olive oil or canola
  • 1 c. fresh sliced mushrooms
  • 1 c. onions, sliced in rings
  • 1 1/2 c. cooked rice or eggless fettuccini

Directions

    Rinse chicken under cold running water; blot dry.

    Cut crosswise into 1/2 x 2 1/2-inch strips; set aside.

    Then combine salt, pepper and flour in plastic bag and add half of chicken and shake to coat.

    Repeat with remainder.
