  • 1 lb. boneless chicken breasts (skinless and chunked)
  • 2 tsp. olive oil
  • 1 (15 oz.) can tomato sauce with onions
  • 1/2 c. sliced fresh mushrooms
  • 2 cloves garlic
  • 1/2 c. Marsala wine (rinse out tomato sauce can)
  • 1/2 tsp. oregano
  • 1 tsp. parsley flakes
  • 1/4 tsp. basil
  • dash of crushed red pepper

Directions

    Combine ingredients in skillet and cook, stirring occasionally to combine flavors.

    Simmer over low heat for 45 minutes.

    Serve over 1 pound cooked pasta or 4 cups cooked rice.
