Chicken Marsala

- 4 pieces skinless chicken breasts
- 1/2 c. chopped scallions
- 1 c. sliced mushrooms
- 1 c. carrots, precooked
- 1/3 c. chicken broth
- 1 c. Marsala wine
Directions

1Pound (flatten) chicken breasts to about 1/4-inch thickness. Fry in 1 tablespoon margarine until golden brown on both sides. Remove to other dish.

2Place scallions, mushrooms and carrots in a frypan with chicken broth and 1/2 cup wine.

3Simmer for 2 minutes. Place chicken in sauce with another 1/2 cup wine and simmer until chicken is done (10 minutes).

4Serves 4.
