- 1 roasting chicken, cut in serving pieces
- 4 oz. butter
- 1/4 c. water
- 1/2 c. Marsala (heavy sweet sherry)
- 1/4 lb. fresh sliced mushrooms
- salt and pepper to taste
- 1 onion, diced
Directions

1Sprinkle chicken pieces with salt and pepper to taste.

2Melt butter in skillet.

3When very hot, add chicken.

4Brown on both sides for about 5 minutes.

5Add onion and brown for 2 minutes on a lower flame.

6Add water and cover.

7Simmer 20 minutes or until tender.

8Add Marsala and mushrooms.

9Simmer for 10 minutes.

10Serve with rice.
