- 1 c. orzo pasta
- 2 whole deboned chicken breasts
- 2 Tbsp. butter
- 1 medium onion, sliced
- 1 garlic clove, minced
- 1 (10 3/4 oz.) can tomato soup
- 1 (4 oz.) jar mushrooms
- 2 medium zucchini, sliced
- 1/2 tsp. basil
- 1/8 tsp. crushed red pepper
Directions

1Prepare orzo.

2Cut breast meat into chunks.

3In 10-inch skillet, cook over medium heat in hot butter the onion and garlic until tender.

4Add chicken and cook until lightly brown on all sides.

5Stir in tomato soup (undiluted) and remaining ingredients. Over high heat, cook until boiling, then reduce heat to low. Cover and simmer about 20 to 30 minutes.

6Serve over orzo.
