Ingredients

  • 1 1/2 Tbsp. gelatin
  • 1 c. chicken broth
  • 2 c. finely chopped cooked chicken
  • 1/3 c. sour cream
  • 2/3 c. mayonnaise
  • 1 Tbsp. lemon juice
  • 2/3 c. chopped celery
  • 2/3 c. frozen baby peas
  • salt and paprika to taste
  • 1 c. whipped cream
  • chopped hard-boiled eggs (optional)
  • 1 Tbsp. minced onion (optional)
  • dill weed to taste (optional)

Directions

    Soften gelatin in 1/2 cup broth.

    Dissolve in 1/2 cup hot broth.

    Combine all ingredients, except the whipped cream, then fold in whipped cream.

    Pour into 1 1/2 to 2-quart mold.

    Serve with crackers.

    Can also be chilled in individual molds and used as a salad course.
