Cold Cherry Soup

- 2 pounds cherries fresh, pitted
- 1 x water
- 1 each lemon slice seeded
- 2 teaspoons cornstarch
- 2 tablespoons sugar
- 3 tablespoons sour cream
Directions

1Place them in a saucepan and add approx.

21 1/2 cup cold water or enough to cover cherries.

3Add sugar and lemon.

4Stir together the cornstarch and sour cream; pour the mixture into the hot cherries.

5Return saucepan to the heat and stir until the sour cream is well combined and the liquid has thickened.

6Do not let the soup boil after the sour cream has been added.

7Cool and chill the soup.

8Add additional sugar and lemon juice, if desired.

9Serve chilled.
