Chicken, Mushroom And Corn Soup

Ingredients

  • 2 cups chicken stock
  • 2 cups water
  • 1/4 cup sherry
  • 1 tbsp grated fresh ginger
  • 2 cloves garlic, minced
  • 2 tsp brown sugar
  • 1 None boneless, skinless chicken breast, thinly sliced
  • 4 oz button mushrooms, thinly sliced
  • 1/2 cup baby corn, halved lengthways
  • 1/2 bunch bok choy, sliced
  • 6 None spring onions , sliced
  • 1 None red chili, sliced
  • None None Soy sauce (optional), to serve

Directions

    In a large saucepan, combine stock, water, sherry, ginger, garlic and sugar on high. Bring to boil. Simmer 3 minutes.

    Stir in chicken, mushrooms and corn. Season to taste. Simmer for another 5 minutes.

    Add choy sum, onions and chili. Simmer 1 minute. Serve immediately with a drizzle of soy sauce, if desired.
