Chicken & Mushroom Florentine

Ingredients

  • 10 to 12 chicken thighs
  • 6 slice bacon
  • 1 small pkg sliced mushrooms
  • 1 small pkg baby spinach
  • 1 1/2 cup shredded mozzerella
  • 1/2 cup white wine
  • 1/3 cup olive oil
  • 2 tbsp Weber Roasted Garlic & Herb seasoning

    Preheat oven to 375F.

    Spray 9x13 glass baking dish with Pam.
  3. 3
    Layer thighs spreading them out so they lay flat.
  4. 4
    Lay each slice of bacon over the tops.
  5. 5
    Bake in oven for 15 minutes.

    Remove and place a layer spinach (to your taste) and a layer of mushrooms over the meat.

    Mix up the olive oil, wine & seasoning in a blender.

    Pour over everything, cover with foil and bake another 15 minutes.

    Uncover and sprinkle cheese over the top and bake another 5-10 minutes or until cheese melted and bubbly.
