  • 4 to 5 boned skinless chicken breasts
  • 1 can diced green chilies (Ortega type)
  • 1/4 to 1/2 lb. Jack cheese
  • 1/2 c. bread crumbs
  • 1/4 c. Parmesan cheese
  • 1 Tbsp. chili powder
  • 1/2 tsp. salt
  • 1/4 tsp. cumin
  • 1/4 tsp. pepper
  • 1/2 c. melted butter

    Pound breasts until thin; dip each in melted butter and then roll in crumb mixture.

    Place a strip of Jack cheese and green chile on each breast and roll up and secure with toothpick.

    Place in a greased oblong dish.

    Drizzle butter over each breast.

    Bake, uncovered, about 50 minutes to 1 hour at 375°.
