Chicken Packets

Ingredients

  • 1 boneless skinless chicken breast, frozen (not thick one! see note below)
  • 14 cup diced tomatoes with garlic and oregano
  • 18 cup onion, slivered
  • 3 basil leaves, fresh, sliced
  • 3 artichoke leaves, sliced
  • 3 button mushrooms, sliced
  • 2 tablespoons mozzarella cheese, shredded
  • pepper
  • italian seasoning
  • 1 pinch fresh garlic
  • 3 tablespoons lemon juice

Directions

    take 2 sheets of foil and stack -- then spray with Pam cooking spray.

    Arrange a chicken breast on the bottom; then add seasonings and all the other ingredients EXCEPT the fresh basil and cheese!

    -- squeeze lemon juice over everything.

    Wrap tightly and with a magic marker, write initials of each person's packet.

    Heat grill to 350 degrees, and cook for about 20 mins -- check to see that meat is white and juices run clear.

    Before serving -- sprinkle fresh basil over the chicken in the packet and add the cheese -- *NOTE: If you have larger and thicker breasts -- cook longer and check before serving.

    I serve this with brown rice, red pepper flakes to taste in the packet!
