- 2 c. sugar
- 3/4 c. vegetable oil
- 4 eggs
- 2 c. flour
- 2 tsp. baking powder
- 1 1/2 tsp. soda
- 1 tsp. salt
- 2 tsp. cinnamon
- 3 c. cooked carrots
- 1/2 c. chopped pecan nuts
Directions

1Mix sugar and oil until fluffy.

2Add eggs and beat well.

3Mix all dry ingredients together, then add to creamed mixture.

4Add carrots and nuts.

5Pour into two 9-inch greased pans or 9 x 13-inch sheet pan.

6Bake for 50 minutes or until done at 350°.
