Chicken Parmesan

  • 2 eggs, lightly beaten
  • 1 tsp. salt
  • dash of pepper
  • 4 whole chicken breasts, split, skinned and boned
  • 1/2 c. Parmesan cheese
  • 8 oz. Mozzarella cheese, sliced or grated
  • 1 c. dry bread crumbs
  • 1 1/2 c. vegetable oil
  • 2 c. tomato sauce
  • 1/2 tsp. basil
  • 1 tsp. parsley
  • 1/2 tsp. oregano
  • 2 Tbsp. butter or margarine

Directions

    Combine eggs, salt and pepper.

    Dip chicken in egg, then bread crumbs.

    Heat oil in electric skillet at 360°.

    Brown chicken on both sides, then remove to casserole.

    Stir tomato sauce and herbs in pan.

    Heat to boiling and simmer for 10 minutes.

    Stir in butter and pour over chicken.

    Sprinkle with Parmesan cheese. Cover and bake 30 minutes.

    Uncover.

    Add Mozzarella cheese to top and bake 10 minutes uncovered.
