  • 2 pounds chicken white meat, or cutlets
  • 1 can water chestnuts sliced
  • 1 jar relish India
  • 1/2 cup mayonnaise can use lo cholesterol, light, etc
  • lemon to taste
  • pepper to taste
  • salt to taste

Directions

    Saute' chicken in oil or butter until tender, covering pan prevents drying or browning of meat.

    Squeeze 1/2 lemon over during simmering.

    Add pepper.

    Mix chestnuts, relish, mayonnaise together.

    Combine all ingredients.

    Salt to taste.

    Best when marinated overnight in refrigerator.
