Chicken Piccata

Ingredients

  • 2 Tbsp. flour
  • salt and pepper to taste
  • 2 chicken breast halves, skinned, boned and pounded flat
  • 2 Tbsp. vegetable oil
  • 2 Tbsp. butter
  • 2 Tbsp. dry white wine
  • 2 Tbsp. fresh lemon juice

Directions

    Mix flour, salt and pepper.

    Dip chicken in flour mix and thoroughly coat.

    Heat oil and butter in frypan.
  4. 4
    When hot, add chicken and saute until brown on each side.

    Remove chicken and place on heated plates.

    Pour most of fat from pan, leaving brown bits.

    Add wine and lemon juice and stir to incorporate drippings. Pour over chicken and serve immediately.
