Chicken Piccata

Ingredients

  • 1 lb. chicken tenders or 4 boneless breasts
  • salt, pepper and flour
  • 4 Tbsp. oleo
  • 1 small can sliced mushrooms
  • garlic powder
  • 1/2 c. chicken broth (either use canned broth or make your own with 1 tsp. chicken granules to 1 c. boiling water)
  • 2 Tbsp. lemon juice
  • 2 Tbsp. parsley flakes

Directions

    Pound chicken pieces down a little with the edge of a saucer or the bottom of a wine bottle.

    Sprinkle chicken with salt and pepper and coat with flour.

    In a skillet, brown chicken in oleo over medium heat for about 5 minutes or until lightly brown.

    Add a little more oleo to pan; add mushrooms, garlic powder, chicken broth, lemon juice and parsley flakes.

    Simmer 7 to 10 minutes, stirring occasionally until sauce slightly thickens.

    Add more broth and/or lemon juice as desired.
