Chicken Piccata

  • 1 Tbsp. lemon juice
  • 4 chicken breasts (boneless)
  • 1 1/2 c. bread crumbs
  • 1/2 tsp. salt
  • 1 egg
  • 1 Tbsp. milk
  • 4 Tbsp. margarine
  • 1/2 c. water
  • 1/4 c. cooking wine (white)
  • 2 tsp. chicken base

    Remove skin from chicken.

    On cutting board with meat mallet, pound each chicken breast into about 1/4-inch thick cutlets.

    Mix bread crumbs and salt.

    In separate bowl mix egg and milk.

    Dip chicken into egg mixture, then into bread crumbs, coating both sides.

    Over medium heat, melt butter.

    Cook cutlets until tender and golden on both sides (5 minutes each side).

    Remove from heat. Keep warm.
