  • 2 1/2 to 3 lb. fryer
  • 1 can undiluted cream of mushroom or cream of chicken soup
  • 1 c. buttermilk
  • 3 1/2 c. reserved chicken broth
  • 1 stick margarine, melted
  • 1 c. self-rising flour
  • salt and pepper

Directions

    Cook chicken in pressure cooker.

    Save broth; debone and deskin chicken.

    Cut into small pieces.

    Lightly grease 9 x 13 x 2-inch pan.

    In another bowl, combine margarine, pepper, salt, flour and buttermilk.

    Mix this to form batter.

    Layer chicken, broth mix and spoon batter on top.

    Bake at 425° for 25 to 30 minutes.
