- 6 chicken breast halves or 1 whole (2 1/2 lb.) fryer plus 1 extra breast
- 6 c. water
- 2 stalks celery with leaves
- 1 onion
- salt to taste
- 1/2 tsp. thyme
- 4 Tbsp. all-purpose flour
- butter
Directions

1Remove skin and fat from chicken.

2Put into pot with water, celery, onion, salt and thyme. Simmer until chicken is tender. Refrigerate and let chicken mixture cool.

3Lift out chicken pieces and remove bones.

4Cut chicken into bite-size pieces.

5Measure 3 1/2 to 4 cups of broth; strain broth and add flour mixed with a small amount of cold water.

6Cook until thickened.

7Remove from stove and cool.
