Ingredients

  • 3 large chicken breasts, cooked, skinned, deboned and cut up in bite size pieces
  • 1/2 large onion, diced
  • 1/2 c. diced celery
  • 1 1/2 Tbsp. oleo
  • 1 can cream of chicken soup
  • 1/2 can chicken broth
  • 1/2 c. mayonnaise
  • 2 c. mixed frozen vegetables or 1 can vegetables, drained
  • 1/2 c. English peas (optional)
  • 1 small potato, diced and cooked
  • 1 c. mild Cheddar cheese, grated

Directions

    Saute onion and celery in oleo.

    In large mixing bowl, add soup to chicken broth.

    Mix all ingredients well and pour in 9 x 13-inch casserole sprayed with Pam.
