  • 3 Tbsp. butter
  • 1/4 c. flour
  • 1 1/4 c. chicken broth
  • 1 c. milk
  • 2 c. cubed chicken
  • 1 2/3 c. cooked peas and carrots
  • 3 or 4 cooked potatoes, cubed
  • 1 1/2 tsp. salt
  • 1/4 tsp. poultry seasoning (optional)
  • 1/8 tsp. pepper (optional)
  • 1 boiled egg, chopped (optional)

    Melt butter in large skillet.

    Blend in flour.

    Cook over low heat until bubbly, stirring constantly.

    Gradually add broth and milk; cook until thick, stirring constantly.

    Stir in vegetables and seasonings and egg.

    Heat.

    Spoon chicken mixture into a 1 1/2-quart dish and top with the biscuits.

    Bake at 400° for 30 minutes or until biscuits are golden brown.
