- 6 boned, skinned chicken breast
- 4 tbls olive oil
- 1/2 cup chopped black olives
- 2 fillets minced anchovies
- 1 clove minced garlic
- 1/2 cup white wine
- 2 cups chopped tomato
- 2 tbls chopped fresh basil
Directions

1In large skillet heat butter & oil, saute chicken on both sides until brown, remove from pan. In same skillet swirl wine; add garlic, tomatoes, anchovy, olives & basil. Simmer 5 minutes. Add chicken, cover, simmer until tender, about 30 minutes.
