- 1 (10 ounce) can cream of chicken soup
- 2 cups cooked chicken, chopped
- 34 cup cheddar cheese, shredded
- 34 cup monterey jack cheese, shredded
- 1 tablespoon jalapeno, chopped
- 8 flour tortillas, heated
- 2 tablespoons butter or 2 tablespoons margarine
- 12 cup salsa
- 12 cup sour cream
Directions

1Mix soup, chicken, cheeses, and jalapeno in medium saucepan.

2Cook stirring frequently over medium heat until heated through, about 5 minutes.

3Divide chicken mixture among each tortilla spreading to within 1/2 inch of edges.

4Moisten tortilla edges with water, fold over to enclose filling.

5Press tortilla edges together to seal.

6Melt butter in large skillet over medium heat, and cook quesadillas until heated through, about 2-3 minutes on each side.

7Top with more cheese if desire, and serve with salsa and sour cream.
