  • 4 skinless chicken breasts
  • 1 can cream of mushroom or celery soup
  • 2 Tbsp. dried parsley
  • 1/2 tsp. black pepper
  • 1 c. dry uncooked rice
  • 1/2 c. wine or cooking sherry (optional)
  • 1 c. chopped celery or broccoli
  • 1 small onion, chopped

Directions

    In an oval chicken roaster pan, stir together all ingredients, except chicken, adding 4 cans water.

    Press chicken down into rice mixture.

    Cover with lid; cook at 350° for 1 hour.

    Serve hot. Serves 4 people.
