  • 1/4 c. margarine
  • 1/4 c. plain flour
  • 1 c. chicken broth
  • 1 can evaporated milk
  • 1/2 c. water
  • 1 tsp. salt
  • 3 c. cooked rice
  • 2 1/2 c. cooked and diced chicken
  • 1 small jar pimento
  • 1 small jar mushrooms
  • 1/3 c. chopped green pepper

Directions

    Melt margarine; blend in flour.

    Brown, then add broth, milk and water mixed together.

    Cook and stir until thick.

    Add salt, rice, chicken and vegetables.

    Pour in 11 x 18-inch glass pan. Bake at 350° for 30 to 40 minutes.
