Chicken Rotel

Ingredients

  • 6 chicken breasts, cooked and boned (save stock)
  • 2 bell peppers, chopped
  • 2 medium onions, chopped
  • 1 stick butter
  • 1 can Ro-Tel tomatoes
  • 2 Tbsp. Worcestershire sauce
  • 1 pkg. spaghetti noodles (1 lb.)
  • 1 lb. Velveeta cheese, cubed
  • 1 can mushroom pieces
  • 1 can LeSueur peas (No. 2 can)

Directions

    Cook spaghetti in 2-quart stock.

    If you do not have that much stock, add a little water.

    Drain.

    Add cubed cheese.

    Add mushrooms, onions (cooked in butter), bell pepper and chicken, Ro-Tel and Worcestershire.

    Fold in peas last.

    Salt and pepper to taste.

    Bake in 300° oven for 30 minutes.

    Serves approximately 8.
