Garlic Mashed Potatoes

  • 22 cloves garlic
  • 2 lb. red new potatoes, unpeeled, cut in 1 inch pieces
  • 1 cup whole milk
  • 3/4 cup unsalted butter
  • Salt and pepper

Directions

    Blanch 16 cloves galic in boiling water 3 separate times, 1 minute each time; set aside; mince remaining cloves.

    Cover potatoes with water in large saucepan; heat to boil; cook over med heat til tender about 12 minutes; drain well.

    Add milk, butter and all garlic to potatoes.

    Mash to desired consistency.

    Season w/salt and pepper.
