- 1 c. chopped mushrooms
- 1/2 c. finely chopped onion
- 1/4 c. finely chopped celery
- 1 clove garlic, finely chopped
- 3 Tbsp. butter
- 2 Tbsp. fine bread crumbs
- 1 Tbsp. finely chopped parsley
- 1/4 tsp. ground thyme
- 1/4 tsp. pepper
- 2 whole chicken breasts, skinned and pounded to 1/4-inch thickness
- 1 can cream of mushroom soup
- 1/4 c. dry white wine or water
Directions

1Combine first 5 ingredients in glass casserole dish. Microwave on High, uncovered, for 6 to 7 minutes.

2Add bread crumbs and seasonings.

3Spread stuffing on chicken and roll up. Hold ends closed with toothpicks.

4Arrange in dish; pour combined wine and soup over chicken.

5Cover with wax paper and microwave on High 11 to 15 minutes.
