  • 4 c. chopped cooked chicken breast (or a whole chicken)
  • 3 celery ribs
  • 2/3 c. seedless green grapes
  • 1/3 c. canned coconut (optional)
  • 2/3 c. slivered almonds, toasted
  • 1/4 c. whipping cream, whipped
  • 1/2 c. mayonnaise
  • 1 Tbsp. lemon juice
  • 1/2 tsp. salt

Directions

    Coarsely chop celery ribs and half the grapes.

    In a large bowl, combine chicken, celery, grapes, coconut and almonds. Toss, mixing well.

    Blend whipped cream with mayonnaise, lemon juice and salt.

    Fold into chicken mixture.
