Ingredients

  • 3 c. boned chicken
  • 4 hard-cooked eggs, chopped finely
  • 1 c. diced celery
  • 1/2 c. finely chopped onion
  • 1/3 c. sweet pickle, minced
  • 1 Tbsp. sugar
  • 2 Tbsp. pickle juice
  • 1 Tbsp. prepared mustard
  • 2 Tbsp. chicken broth
  • 3/4 c. mayonnaise
  • 1 tsp. seasoned salt
  • pepper to taste

Directions

    Cook chicken until tender, using additional celery, onion and salt in water for seasoning.

    Remove chicken from bones, skin and chop fine or grind.

    Add eggs, celery, onion, pickles, sugar, pickle juice and mustard.

    Add chicken broth and enough mayonnaise for good spreading.

    Salt and pepper to taste.

    Spread and cut sandwiches.

    Makes 5 to 6 cups or 70 small sandwiches.
