Ingredients

  • 1 lb boneless skinless chicken thighs
  • 1 tbsp olive oil
  • 1 tbsp Worcestershire sauce
  • 1 clove garlic, crushed
  • 14 oz mixed grilled vegetables
  • 2 cups cooked couscous
  • 1 cup crumbled feta cheese
  • 4 None hard-boiled eggs, peeled and quartered
  • 7 oz mixed salad greens
  • None None Vinaigrette, mayonnaise, to serve
  • None None FOR THE BLUE CHEESE DRESSING
  • 3/4 cup mayonnaise
  • 3 oz crumbled blue cheese
  • 2 tbsp white balsamic vinegar

Directions

    Preheat the grill to medium-high. Combine chicken, oil, Worcestershire sauce and garlic in a bowl. Grill chicken 5-6 mins each side. Slice and keep warm.

    For the blue cheese dressing, combine all ingredients in a medium bowl.

    Arrange all ingredients on platters. Serve with dressings.
