  • 1 1/2 c. cubed cooked chicken breasts
  • 1/2 c. sliced celery
  • 2 Tbsp. golden raisins
  • 1/3 c. reduced calorie mayonnaise
  • 1 Tbsp. lemon juice
  • 1/4 tsp. ginger powder
  • 1 c. fresh spinach leaves or watercress
  • 1 medium red apple, sliced
  • 2 (6-inch) whole wheat pocket (pita) bread, halved crosswise
  • green onions

Directions

    In medium bowl, combine chicken, celery, raisins and green onions.

    In small bowl, combine mayo, lemon juice and ginger; blend well.

    Pour dressing over chicken mixture; mix well. Arrange 1/4 of spinach leaves and 1/4 of apple slices in each pocket with the pieces extending slightly over edge of pocket. Spoon 1/4 of chicken salad mixture into each pocket.
