- 4 to 5 oz. boneless, skinless chicken breasts
- 1/2 c. plain bread crumbs
- 2 Tbsp. Parmesan cheese
- 1 tsp. dried oregano
- 2 egg whites
- 1 Tbsp. olive oil
- 1/2 c. dry white wine
- salt and pepper to taste
Directions

1Remove fat from chicken and flatten by slapping with palm of your hand.

2Mix bread crumbs, cheese and oregano.

3Add a little salt and pepper.

4Beat egg whites until foamy and dip chicken in it.

5Coat chicken with bread crumbs and dip again in egg whites. Coat with bread crumbs a second time.

6Heat oil in a nonstick skillet and brown chicken on both sides.

7Reduce heat.

8Add wine and cover.

9Cook 5 more minutes.

10There will be no wine left in pan.

11Serve with pasta.
