  • 1 lb. sliced zucchini
  • 1 large carrot, shredded
  • 1 large chopped onion
  • 3/4 c. chopped celery
  • 1/2 medium green pepper, cut into strips
  • 1/2 tsp. each of garlic and basil
  • 1/2 c. salsa
  • 2 tomatoes, chopped (large chunks)
  • 1/4 c. oil

    Heat oil.

    Add zucchini, carrot, onion, celery, pepper and herbs.

    Cook covered over medium heat about 5 minutes until vegetables are done, but crisp.

    Stir occasionally.
