- 2 c. sugar
- 5 large eggs
- 1 small can crushed pineapple, drained
- 3/4 c. buttermilk
- 1 tsp. vanilla
- 1 (3 1/2 oz.) can coconut
- 2 (9-inch) pie shells (uncooked)
Directions

1Combine sugar and eggs; mix well. Add all other ingredients. Pour into the pie shells, 1/2 mixture into each one. Bake at 350° for 45 minutes or until knife inserted in the middle comes out clean. Cool before serving. Makes 12 servings. Preparation time: 1:00.
