Coconut-Pineapple Pie

  • 1/2 c. margarine (soft)
  • 2 c. sugar
  • 5 large eggs
  • 1 small can crushed pineapple, drained
  • 3/4 c. buttermilk
  • 1 tsp. vanilla
  • 1 (3 1/2 oz.) can coconut
  • 2 (9-inch) pie shells (uncooked)

Directions

    Combine sugar and eggs; mix well. Add all other ingredients. Pour into the pie shells, 1/2 mixture into each one. Bake at 350° for 45 minutes or until knife inserted in the middle comes out clean. Cool before serving. Makes 12 servings. Preparation time: 1:00.
