- 1 teaspoon Garlic Powder
- 1 teaspoon Onion Powder
- 1 teaspoon Turmeric Powder
- 3 whole Boneless, Skinless Chicken Breasts
- 1/2 whole Lemon, Juiced

- 2 cups Low Sodium Chicken Broth
- 1 whole Lemon, Juiced
- 1/2 cups Greek Yogurt
- 1 Tablespoon Fresh Dill
- 1 Tablespoon Garlic Powder
- 1 teaspoon Pepper
- 1/2 cups Hummus
- 1/2 cups Parsley, Roughly Chopped
- 16 whole Cherry Tomatoes, Halved
- Pita Chips, Naan Or Pita Bread

2Preheat oven to 400 F. Peel carrots.

3On a rimmed baking sheet toss carrots with olive oil.

4Add spices and toss to coat the carrots.

5Place tray in the oven and cook for 30 minutes, flipping at 15 minutes.

7Meanwhile slice chicken breasts into 1/2 inch bite sized pieces.

8On a separate rimmed baking sheet, place chicken.

9Squeeze lemon juice over chicken.

10Add spices and toss until evenly distributed.

11Place chicken in oven and bake until chicken is cooked though, about 23 minutes.

12Once the carrots and chicken are done, set aside and let them rest.

14As the chicken and carrots are cooking, prepare rice.

15Add olive oil to a medium pot on medium high heat.

16Add onion and garlic, stirring so garlic does not burn, and cook about 2 minutes.
