  • 1 lb boneless skinless chicken breast, chopped
  • 1 large onion, minced
  • 3 garlic cloves, minced
  • 1 red bell pepper, chopped
  • 1 orange bell pepper, chopped
  • 1 yellow bell pepper, chopped
  • 8 ounces sliced cremini mushrooms
  • 2 lemons, juice of
  • lemon zest
  • 2 quarts chicken broth
  • 1 tablespoon dried basil
  • 2 tomatoes, chopped
  • cooking spray

Directions

    brown chicken in non stick cooking spray.

    remove chicken

    add all of the veggies and cook down for about ten minutes.

    add chicken back into pan

    add basil lemon juice and chicken broth salt and pepper to taste.

    cook for about 30 min serve with instant brown rice.
