  • 1 broiler-fryer
  • 1 large onion in quarters
  • 2 carrots
  • 2 to 3 celery stalks
  • 4 whole peppercorns
  • 1 bay leaf
  • 3 to 4 whole cloves
  • salt
  • water to cover
  • 1/4 c. parsley

Directions

    Place washed chicken in kettle with remaining ingredients. Bring just to boil.

    Lower heat and simmer 2 hours or until chicken falls away from bone.

    Remove chicken from broth; set aside.

    Strain broth and return to pot.

    If desired, the broth may be cooled and fat removed from the top.

    Cooked noodles may be added at this point and the boned chicken returned to broth along with 1/4 cup parsley and 1 or 2 chicken bouillon cubes.

    If chilled and skimmed of fat, proceed as directed with noodles, parsley and bouillon upon reheating.
