- 1 broiler-fryer
- 1 large onion in quarters
- 2 carrots
- 2 to 3 celery stalks
- 4 whole peppercorns
- 1 bay leaf
- 3 to 4 whole cloves
- salt
- water to cover
- 1/4 c. parsley
Directions

1Place washed chicken in kettle with remaining ingredients. Bring just to boil.

2Lower heat and simmer 2 hours or until chicken falls away from bone.

3Remove chicken from broth; set aside.

4Strain broth and return to pot.

5If desired, the broth may be cooled and fat removed from the top.

6Cooked noodles may be added at this point and the boned chicken returned to broth along with 1/4 cup parsley and 1 or 2 chicken bouillon cubes.

7If chilled and skimmed of fat, proceed as directed with noodles, parsley and bouillon upon reheating.
