Chicken Spaghetti

Ingredients

  • 1/4 c. chopped onion
  • 1/4 c. chopped bell pepper
  • 1/2 c. chopped celery
  • 2 Tbsp. cooking oil (I use canola oil)
  • 1 c. boiling water or chicken broth (I use chicken broth)
  • 1 pkg. Weight Watchers chicken gravy mix
  • 4 oz. can sliced mushrooms (optional)
  • 1 can Ro-Tel tomatoes
  • 4 oz. Velveeta light
  • 8 oz. cooked chopped chicken
  • 3 c. cooked thin spaghetti

Directions

    Saute first three ingredients in oil.

    Add gravy mix dissolved in chicken broth or water.

    Add mushrooms, Ro-Tel tomatoes, cheese and chicken.

    Stir until warm and cheese is melted.

    Layer mixture with spaghetti in Pyrex dish that is sprayed with Pam.

    Bake in a 400° oven for 25 minutes or until bubbly.
