  • 4 lb. hen or fryer
  • 1/2 c. salad oil
  • 3 chopped onions
  • 1 chopped green pepper
  • 1 1/2 c. chopped celery
  • 1 (1 lb.) pkg. Velveeta
  • 1 c. tomatoes
  • 1 can mushrooms
  • 1 c. chicken broth
  • 1 can Ro-Tel tomatoes
  • 1 (1 lb.) pkg. spaghetti

Directions

    Boil chicken; debone and cut up.

    In a skillet, slowly cook onions, pepper and celery in salad oil.

    In a large heavy pot, place tomatoes, mushrooms and broth.

    Add Ro-Tel tomatoes and bring to a boil.

    Melt Velveeta cheese in liquid.

    Cook spaghetti in chicken broth from boiling chicken.

    Combine with ingredients and bake at 350° for 20 to 30 minutes until heated through.
